Open Question: Why do some countries have strange diets, like China, Vietnam etc?

If you look at country around the world except china, vietnam, taiwan, thailand they all have normal diets. They eat the same food as we eat but the above mentioned countries eat anything, from monkey brain to the penis of a tiger to the stomach of a fish. Not to mention dogs.
